Start off by creating the pineapple salsa

Every good taco needs a bit of spice

To do that we can create a green salsa, with roasted green chillis, tomatoes, onions and garlic which is blended up with avocado and coriander. 

Now for the fish

Season the fish fillets up and drizzle with olive oil and stick them in the oven.
